Father’s Day Cilantro Turkey Burgers with Guacamole, Chipotle Mayo, and a Cream Soda Float

"And these words that I command you today shall be on your heart. You shall teach them diligently to your children, and shall talk of them when you sit in your house, and when you walk by the way, and when you lie down, and when you rise." (Deut. 6:6-7)

"Fathers, do not provoke your children to anger, but bring them up in the discipline and instruction of the Lord." (Eph. 6:4)

"Husbands, love your wives, as Christ loved the church and gave himself up for her, that he might sanctify her, having cleansed her by the washing of water with the word, so that he might present the church to himself in splendor, without spot or wrinkle or any such thing, that she might be holy and without blemish." (Eph. 5:25-27)

When we read these passages we are reminded of the great responsibility placed on our husbands and fathers. God has entrusted them with the roles of leader, provider, and servant, to name a few. They are models of Christ in our lives, and as such they represent our heavenly father on this side of eternity. We are grateful for them, and on this special day we have the opportunity to shower them with our love and service. In our home, there is no better way to show dad we love him than by sharing a hearty meal together. This year, these juicy and flavorful Tex-Mex-inspired burgers are just the ticket! Add a cold glass of cream soda float (and maybe rights to the TV remote) and he’ll have an unforgettable meal.

Father’s Day Cilantro Turkey Burgers with Guacamole, Chipotle Mayo, and a Cream Soda Float  

Prep time: 25 minutes

Cook time: 15 minutes

Servings: 8

INGREDIENTS

Guacamole:

  • 2 Hass avocados
  • 1 small garlic clove, minced
  • ¼ onion, finely chopped
  • Juice of 2 limes (adjust to taste)
  • Salt and pepper to taste

Cream Soda Float:

  • Frosty mug
  • 12 oz chilled cream soda
  • 1 scoop vanilla ice cream

Burgers:


  • 3 garlic cloves
  • 1 small red onion, quartered (plus extra slices for serving)
  • 1 tsp paprika
  • 1 tsp cumin
  • 3 tsp salt
  • Crushed red pepper flakes, to taste
  • One bunch cilantro
  • 2 lbs ground turkey
  • ½ cup unseasoned breadcrumbs
  • Chipotle-flavored mayonnaise
  • 8 slices pepper jack cheese
  • 8 hamburger buns
  • Lettuce and tomato for serving
  • Extra virgin olive oil

  • Guacamole (directions below) 

    DIRECTIONS

    Guacamole:  Place all the ingredients in a bowl and mix until combined, adjusting seasoning ingredients to taste.

    Cream Soda Float: Pour the cream soda into a frosty mug and carefully add the ice cream.

    Burgers:

    1. Preheat the grill to high.
    2. Place the first six ingredients in a blender and pulse until a smooth paste forms.
    3. Add the cilantro to the blender and pulse until incorporated.
    4. Place the ground turkey, blended paste, and bread crumbs into a large bowl and mix until combined.
    5. Form eight burger patties.
    6. Brush the grill with olive oil and grill burgers until cooked through, 3-4 minutes on each side.
    7. During the last minute of grilling, place one slice of pepper jack cheese on each patty; cover the grill and let the cheese soften before removing the burgers from the grill.
    8. Spread the desired amount of chipotle mayo on the bottom of the bun and assemble the burger with the patty, a tablespoon of guacamole, lettuce, tomato, and onion.
    9. Serve with a cold cream soda float.
